Christmas Tree Meringue

Meringues are so simple to make and are delicious, delicate bites. Making them into Christmas trees are a fun way to take this simple dessert and make them into a beautiful, holiday themed design. Make them up to 1 week in advance, and store in a cool, dry air tight container at room temperature.

Hazelnut Orange Biscotti

Biscotti are one of my favorite cookies because they are dessert but they are also breakfast with a big cup of coffee or tea. These cookies have a beautiful, rich flavor from the hazelnuts which goes so well with the zesty orange and warm flavor from the cinnamon. They are also a great make ahead cookie, these can be baked 2 weeks in advance and they will still have their great flavor and texture.

Oatmeal Fig Cookies

Crisp around the edges and chewy on the inside, this cookie replaces the classic raisin for chopped up figs which add a richer, honey like sweetness . If you are a chocolate addict like me, stir in some chocolate chips at the end. This cookie dough freezes really well so you can scoop out and roll the cookies, place them on a parchment lined sheet tray and freeze. Once frozen transfer to a zip top bag and bake from frozen, adding approximately 5 more minutes onto the total cook time.

Fudgy Brownies

I love brownies. I love brownies because they are a crowd pleaser, you can make one batch and feed a bunch of people, they are great make aheads, they travel well and you use one bowl to make them. Most desserts don't check all those boxes. On top if it, this brownie is so fudgy in the center and has a rich chocolate flavor; top them with ice cream, whipped cream, or salted caramel and they go to a whole other level. Double this recipe for a larger batch and bake in a 9x13 baking dish for about 10 minutes longer.

Italian Rainbow Cookies

This is the perfect cake meets cookie dessert! I usually make these around the holidays but they really are delicious all year long, especially if you have someone who can't decide if they want cake or cookies. I like to use natural food coloring to dye the cookies, my favorite brand is Supernatural - they have a holiday green and red that is perfect for this. These cookies store for 2 weeks in an airtight container, lined with parchment paper in the refrigerator.

Triple Chocolate Pudding

This triple chocolate pudding combines bittersweet chocolate, Nutella and cacao nibs to create the perfect dessert. These are great make ahead desserts; just make the pudding, put in the ramekins, cover with plastic wrap and refrigerate up to a week. Add whipped cream and cacao nibs before serving.

Empire Biscuits

I learned to make empire biscuits from my grandmother who immigrated to the US from Scotland when she was a girl. The base of the cookie is a classic shortbread recipe (they are good on their own) but then you sandwich these shortbread cookies together with raspberry jam and top them with a sugar glaze and cherry to make them extra special. Whether you make shortbread or the full empire biscuit they are a great holiday cookie!
