40 meringues
Your time: 20 minutes Oven time: 2 hours
4 egg whites
1/2 teaspoon cream of tartar
1/4 teaspoon salt
1 cup sugar
1/2 teaspoon vanilla extract
2 drops green gel food coloring
Yellow and white star sprinkles
Preheat oven to 200 degrees. Line a sheet tray with parchment paper or a silpat.
In the bowl of a stand mixer fitted with a whisk attachment combine egg whites, cream of tartar, and salt. Beat on high speed until the egg whites become foamy. In a slow and steady stream add the sugar and then the vanilla extract. Continue to beat until the meringue holds stiff peaks, approximately 10 minutes.
Scoop meringue into a pastry bag fitted with a large star tip. Pipe a 2-inch round for the base and continue piping, one one motion, swirling up three more layers to form the tree. Add a star on top of each tree.
Bake meringues for 2 hours or until they are no longer tacky to the touch. Remove from oven and store at room temperature.
